This Irish-American has less to do with a certain head-of-state coming to visit his cousin seven times removed and more to do with La Cucina's Irish menu that they have been running for the last few weeks and which will continue over the summer. The menu is still predominantly Italian with a focus on ingredients sourced from Irish suppliers. These include Ummera, Glenisk, Crowes Farm and Jim Cronin to name a few.
My contribution is american style brownies baked in mine own Irish kitchen. They're happily paired with another Irish-American combo of Murphy's Ice Cream. I get asked for this recipe more than any other and I always hold my hands up and confess that it's Nigella Lawson's from How To Be A Domestic Goddess. I'm sure the recipe has appeared out there in blogland many times but here it is again in all it's chocolate goodness.
BROWNIES
- 375g soft unsalted butter
- 375g 70% cocoa chocolate
- 6 large eggs
- 1 tbls vanilla extract
- 500g caster sugar
- 225g plain flour
- 1 tsp salt
- 300g walnuts (optional)
- tin measuring approx. 33 by 23 by 6cm
- Preheat the oven to 180 C. Line the tin, sides and base, with tin foil. Melt the butter and chocolate together in a large heavy based pan that will hold all the ingredients later. The heat shoul be low to stop the chocolate from burning.
- Meanwhile in a bowl whisk together the eggs, sugar and vanilla until fluffy. Stir the salt into the flour.
- When the chocolate has melted let it cool slightly and then beat in the egg mixture followed by the flour and salt until fully combined. Scrape out of the pan into the lined tin.
- Bake for about 25 minutes (although this depends on your oven mine always takes longer than this but I'm writing the recipe as it appears in the book). When they're ready they top should have a thin crackly layer and there shouls be a slight wobble in the middle of the brownies. If they're not ready after 25 minutes keep a close eye on them because a dry brownie is a waste of good chocolate!
- Cut them when they're cool into a slarge or small pieces as you choose.
I was sorry to miss these brownies on the day that I was in to La Cucina for lunch - apparently they had been flying out the door!

You're back!! Hurray!! I haven't been looking at blogs for years but I found some old links today and it made me wonder if you had begun blogging again, and here you are! :)
I was thinking about you recently actually - I live in London now and there are so many wonderful Cupcakeries here (I think that should be a word!), but of course it's all about Macaroons now! Ah well, I prefer to be unfashionable! :) Hope all is well with you! Must send you a proper email!
