I'd love to say I've been doing something glamorous for the last yearish offline but to be honest apart from baking the odd tower of cupcakes (such as the one below) I've been camera-less while reading, sleeping, neglecting my e-mails, doing a spot of gardening (see below below) and baking the odd tower of cupcakes.
The world has been battered and bruised since the last asparagus season and with the next one shortly arriving to a plate near you I'm remaining quietly optimistic that 2009 will be the Year of the Cupcake, helping to keep the Big Bad Recessionary Wolf (not to mention the three poorly little pigs) firmly from my door.
For that reason once I get my hands on a decent camera again the blog will become a mini-portfolio for the always good value cupcakes that folks order to sweeten their celebrations with family and friends. As I don't have a shop front as such I'm hoping the site will reassure potential customers that their virtual order will result in real live cupcakes, baked with as much love as I can muster at 4am. If anyone wants to leave their sugar-fuelled compliments I'll accept them with as much grace as I can muster after 2 1/2 hours sleep.
I have my biggest order to date this weekend (200 cupcakes) and once I've manouvered my way round the 25kg bags of sugar in my kitchen I'll let you know how I get on, by 2010 at the latest I swear.

I'm currently planning the dessert table for my (still 14months away) nuptials and I'm thinking it won’t take much arm twisting to talk me into a tower of cupcakes!
Incidentally, can you do gluten free cupcakes since in your year off my beloved has been diagnosed a celiac.

Inspired by you, my cupcakes went down a treat in my local Farmers Market on Saturday! :D Ok so I had to put up with a few questions like "Are these just ordinary Queen Cakes??" I had to resist throwing the Magnolia Bakery Cookbook at them and explain that "No...these are SO much better!" :D
They disappeared anyway so I'm making them again next week for sure! A thousand thank yous for bringing this recipe to Limerick and to my tastebuds! :D

Welcome Back Laura! Good to see you back, in the year you've been away I've figured out that I am actually capable of baking pretty decent muffins and of rustling up a cheesecake - a far cry from the onion muffins (all that I was once capable of on the baking-front!). My blog is still laying abandoned I'm afraid... maybe one day I'll take the plunge again!

I just saw a Masterchef rerun and they were making cupcakes. Never thought of cupcakes the same since then.

Quite the cupcake master you are! Just seeing your food creations makes me crave and step outside to grab some sweet treats. But then, I'd still have to wait because I just had my teeth cleaned. I'll go ahead and show some of these recipes to my sister.
