Salad days are here to stay, for a little while at least...
This salad is based on a recipe from Grub by Jane Lawson.
ROASTED BUTTERNUT SQUASH SALAD
- 2 butternut squash, about 2kg in total
- 60ml olive oil
- 3 tsps Maldon sea salt flakes
- a few large sprigs of thyme, broken into smaller sprigs
- 3 large handfuls rocket (arugula)
- 50g walnuts or pecans, toasted and roughly chopped
- pinch of cinnamon, optional
For the mustard dressing:
- 5 tbls olive oil
- 2 heaped tbls dijon mustard
- 1 heaped tbls wholegrain mustard
- 2 tbls white wine vinegar
- salt & pepper
- pinch brown sugar, optional
- Preheat the oven to 220 C. Cut the pumpkins in half and remove the seeds, but do not peel. Cut into thick wedges or slices. Toss the pumpkin with the olive oil, sea salt flakes and thyme sprigs, then spread out in two roasting tins. Bake for an hour, or until the pumpkin is tender and caramelised at the edges. Remove from the oven and allow to cool to room temperature.
- Put all the mustard dressing ingredients in a small jug or bowl and whisk together
- Toss the pumpkin and rocket leaves together briefly and turn out gently onto a serving platter. Drizzle over the dressing, sprinkle with nuts and serve.
Serves 4 as a lunch dish or 6 as a side-dish.
