For years I've been making a similar pate from a Moosewood Cookbook recipe. It always looks yucky and brownish, but it tastes divine.

As part of my attempts to master the arcane arts of baking I'll be browsing through your catalogue and trying out some recipes.

I've been making, for vegetarian friends, a mushroom pate, bound with breadcrumbs instead of lentils, which gives quite a light, sometimes almost foamy texture. Or a dense, doughy one, depending. How are the lentils for texture? (looks fantastic from the picture)

I have been craving pate lately like you wouldn't believe. I was thinking more chicken liver pate, but now that I've read about this mushroom version - I might have to make both! Poor me, eh? =)
