I was just thinking this morning that I had hoped you'd post something soon.. Yay! You did!

And these do not disappoint :D I made them too when we did the gateau, I doubled my choux just so that I could make some gougeres! Your's turned out way better looking than mine - I love the color of yours (burnished)! I didn't sprinkle the cheese over mine nor did I do an egg wash - so, thanks to you, I'll do that when I bake up the frozen puffs I saved. :D

Mouth watering! I rmemebr my mom making a ton of them for dinner parties back in the 80s and wondering why the guests never seemed to have enough: because I would grab agood portion of them while they were being set on pretty trays...heheh!
